Crispy Onion and Apple Relish:
- 2 medium white onions
- 1 green apple
- 1 cup mayonaise
- ¾ cup apple cider vinegar
- ¾ cup water
- ½ cup sugar
- 1 TBSP Full Boar BBQ Classic Campfire Rub or favorite BBQ rub
Instructions:
- Half onions and slice them into very thin slivers before transferring them into a quart mason jar. With the onions in the jar pour in the apple cider vinegar, water, and lastly the sugar. Shake very well until sugar is completely dissolved. Cover and transfer to the fridge for at least three hours, I prefer overnight. If you have the opportunity shake this a few times more while it is in the fridge but it is not necessary.
- Once the onions have marinated pour the jar into a colander retaining the onion but discarding the vinegar, water, sugar mixture. Rinse out the jar and then replace the onions.
- Dice the apple into about 1/8 inch cubes. And add to the jar.
- On top of this put in the mayo and Full Boar BBQ Classic Campfire Rub before mixing well with a long spoon. Will stay good in the fridge for a week.
- Use this relish as a dip for French bread, add it to a pulled pork sandwich, or even eat it just like a slaw. It is a great way to add flavor to any meal.
