BBQ Bacon Wrapped Jalapeño Shrimp
One of my favorite appetizer I have ever created!
Ingredients:
- 1 lb. peeled and deveined shrimp with the tail on
- 1 lb. thin sliced bacon cut in half
- 1 lemon
- 1 lime
- 2 jalapeños seeded and cut into rings
- Full Boar BBQ Garden, Barn, and River Rub
- Full Boar BBQ Classic Campfire BBQ Rub
- Full Boar BBQ 17th and Vine Kansas City BBQ Sauce
Instructions:
- Squeeze the juice from both the lemon and lime into a bowl with about 1 TBSP of Garden, Barn, and River Rub
- Toss the shrimp in this mixture and marinade for at least a half hour
- Preheat smoker to 275
- Wrap each shrimp in half a slice of bacon then sliding on a jalapeño ring
- Sprinkle with Classic campfire rub on both sides giving it about 5 minutes to soak in before putting it in the smoker
- Smoke for about an hour or until the bacon has good bite through
- Serve immediately with 17th and Vine sauce for dipping

***Tip: smoke these on a wire grate with foil underneath to avoid bacon dripping in your smoker*
